Next time you visit the grocery store, make sure you stock up on these fresh ingredients because we’ve compiled a list of five recipes that will keep you fit and healthy while you quarantine!

1) Cauliflower Sausage Soup  

Preparation Time: 30 Minutes

Ingredients

  • 1 Tbsp. olive oil
  • 12 oz. mild Italian sausage, removed from casing
  • 3 slices bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups cauliflower florets, about 1 1/4 pounds 
  • 1 (32 oz.) carton chicken broth
  • 1 cup half and half
  • 4 cups chopped curly kale
  • Kosher salt and fresh black pepper

2) Crispy Cilantro Lime Chicken

 

Preparation Time: 45 Minutes

Ingredients

  • 3 tablespoons olive oil divided
  • 1/4 cup fresh squeezed lime juice (Juice of 2 limes)
  • 1/4 cup fresh chopped cilantro
  • 1 teaspoon red chili (or pepper) flakes
  • 4 cloves garlic minced
  • 2 teaspoons brown sugar
  • 3/4 teaspoon ground cumin
  • 6 bone-in skin-on (or off) chicken thighs
  • Salt and pepper to taste
  • Fresh cilantro leaves to serve

3) Breakfast Burritos

Preparation Time: 38 Minutes

Ingredients

  • 2 teaspoons canola oil
  • 1/2 small red onion, diced (1 cup)
  • 1 red bell pepper, seeded and diced
  • 1 cup drained, rinsed canned black beans, preferably low-sodium
  • 1/4 teaspoon chili flakes
  • Salt and freshly ground black pepper
  • 4 eggs and 4 egg whites
  • 1/3 cup (about 1 1/2 ounce) shredded pepper Jack cheese
  • Nonstick cooking spray
  • 4 (10 inch) whole wheat tortillas (burrito size)
  • 1/4 cup reduced fat-free sour cream or 2 percent plain Greek yogurt
  • 1/4 cup salsa
  • 1 large tomato, (4 ounces) seeded and diced
  • 1 small avocado (4 ounces), cubed

Ingredients

  • 2 avocados, cubed
  • Juice of 1 lime
  • 2 c. Shredded chicken
  • 1 bell peppers, seeds and cores removed, chopped
  • 1/2 small red onion, chopped
  • 1/2 c. Shredded Monterey Jack
  • 1/2 c. shredded Cheddar
  • 2 tbsp. sour cream
  • 2 tbsp. finely chopped chives

  • 1 lb. pizza dough
  • 1/2 medium head (about 1 lb) cauliflower (thinly sliced)
  • 1 small red onion (thinly sliced)
  • 1/2 c. fresh flat-leaf parsley
  • 4 oz. (about 1 3/4 cups) gruyère cheese (coarsely grated)
